Keoni and I tried this cute little restaurant in Sandy Springs today. It’s located in the Kroger shopping off Roswell Rd. They have all kinds of tacos made with corn or flour tortillas, quesadillas, nachos and salads. I ordered a chicken with mole and sesame seeds and a veggie with grilled peppers and onions, beans and rice. Keoni ordered a fish taco with jalapeno slaw and a chicken with grilled pineapple and quacamole. The fish one was his favorite and the veggie was mine. Their chips and salsa are really good and fresh, the chips having a slight lime flavor. The tacos start at only $2.50 each and 2 was plenty for us. We didn’t have drinks but they do have a full bar and lots of different kinds of margaritas, including a “skinny” one without the mix! Everything was so delicious and fresh tasting and the staff is so friendly!

In a large pitcher, combine 5 1/2cups mango nectar (sometimes found in the ethnic section of your grocery), 1 cup fresh lime juice, 1 cup tequila and 3/4 cup triple sec. Stir well and refrigerate for at least 1 hour. Serve over ice in a salt-rimmed glass, if desired. Makes about 8 cups.

Disfrutar! (Spanish for enjoy!)

Keoni and I have been so busy and haven’t gone out much lately. I did meet some friends at Eclipse di Luna for a birthday celebration. One of my favorite things there is the black bean hummus and I’ve tried to copy it but mine never tasted as good. When I got home I had my new Cooking Light magazine and there was this delicious recipe for black bean hummus! I added a few pine nuts because that’s what they do at Eclipse.

Ingredients

1 garlic clove, peeled

2 tablespoons fresh lemon juice

1 tablespoon tahini (roasted sesame seed paste)

1 teaspoon ground cumin

1/4 teaspoon salt

1 (15-ounce) can black beans, rinsed and drained

1 small jalapeño pepper, chopped (about 2 tablespoons)

Dash of crushed red pepper

2 teaspoons extra-virgin olive oil

Dash of ground red pepper

1 (6-ounce) bag pita chips (such as Stacy’s Simply Naked)

Preparation

1. Place garlic in a food processor; process until finely chopped. Add lemon juice, tahini, cumin, salt, black beans, jalapeño pepper, and crushed red pepper; process until smooth. Spoon bean mixture into a medium bowl, and drizzle with extra-virgin olive oil. Sprinkle with ground red pepper. Serve with pita chips

I found an easy, quick dinner at Trader Joe’s. They have perfectly seasoned pork carnitas already prepared for only $4.99. I also buy the homemade flour tortillas. I make my own guacamole, saute some red and yellow peppers, onions and do a Spanish rice mix and I have a complete meal!

For my flight attendant friends who like to bring their food, they’re great for leftovers to bring to work. Assemble, wrap in foil and heat on the airplane!

Well, this summer has been a blur! Keoni and I have both been so busy working and going out of town (separately).

We were both in town last Friday and decided to try Lime Taqueria and tequila Bar in Smyrna.

The atmosphere is nice. Upscale and colorful (lots of lime green). We sat outside and were greeted promptly. The menu has tacos (a la carte) and tapas and entrees. We were interested in the tapas because we like to share and try different things.

The quacomole is really good but doesn’t come with enough chips so we ordered chips and salsa. You get a basket of chips with 4 different kinds of sauce that remind you of some kind of barbecue sauce. They claim to be authentic Mexican and maybe they are but I wouldn’t get this again!

The tacos were tasty but small and the seared tuna appetizer was delicious. They also have soups, salads and entrees. (we didn’t get any of these)

If your in the mood for a specialty drink, they have lots to choose from, including mojotos and of course, tequilas. I had a good Malbec for a reasonable $7.

Keoni and I both agree we would go back if we were’t hungry! Seriously, if we just wanted a couple of tacos and some drinks at a lively bar we’d go back.
