Slow Cooked Beef Vindaloo

I lb stew beef
1 onion, cut in quarters
1 red bell pepper, sliced
1 tbsp. chopped ginger
4-5 garlic cloves, sliced
1 tbsp. curry
1 tsp. turmeric
1/2 tsp cinnamon
1/2 tsp red pepper
1/4 tsp ground cloves
1 tbsp apple cider vinegar
1/4 cup red wine
1 can diced tomatoes
2 dried hot red peppers
2 potatoes, peeled and cubed
salt and pepper

Turmeric Beef with Pine Nuts

Turmeric is one of my favorite spices.  Besides many health benefits, including anti-imflammatory properties, it makes food taste good and I love the yellow hue it gives food.  I’ve been known to roast potatoes or cauliflour with it along with lemon juice and garlic then add fresh cilantro.  Delicious!

Chana Dal

Chana Dal
An easy to prepare dish from India.
Suitable for vegetarian.
2 cups chana dal ( yellow dried split peas )
1 onion, peeled and chopped
1 tomato, chopped
1lb ( 450g ) spinach leaves roughly chopped, fresh or frozen
3 cloves of garlic
1 tablespoon of vegetable oil or gee
